Before you start: Feel free to cook once and store it. Below instructions makes 4 servings. Most pans won't fit more than 8 servings, so if you want to make more, cook in batches.
Make 3/4 cup of rice per person.
Drain and squeeze as much water out of 1 pack of tofu without breaking, and cut tofu into 1.5cm cubes.
In a big pan, fry our homemade-mapo tofu sauce until melted. Add 1.25cup (300ml) water.
Add tofu. Boil for 9 mins on high. Stir slowly occasionally.
Mix 3tbsp water with 3tsp of starch powder. Pour evenly into pan. Stir 30secs until thick.
Add chives and peppercorn oil. Boil 20 secs. Add salt / water to adjust saltiness.
Reheat Instructions: Mix and microwave for 1.5-2mins. Sauce will melt.
